What Gives Punjabi Chai Its Signature Kick?

Unlike lighter regional styles, traditional Punjabi chai is full-bodied, deeply aromatic, and deliberately bold. Achieving that rich, creamy balance requires three non-negotiables:

  1. The Rolling Boil (Khadka): Tea leaves, crushed whole spices, and water must boil vigorously together first so the tannins and aromatics fully release.

  2. Whole Milk Integration: Cold milk added too late dilutes the tea. Simmering the milk directly with the brew lets the fats emulsify with the tea liquor, creating that thick, velvety mouthfeel.
